Spicy Chutney

This chutney is delicious with cold meat and cheeses. Makes a great gift too!

Rosemary’s Spicy Chutney

Ingredients


A knob of butter
2 large  onions - chopped
12 tomatoes
4 apples - peeled and diced into small cubes
4 tbsp cider vinegar
4 tbsp sweet mincemeat
4 tsp muscovado sugar
Salt and pepper to taste


Method


Saute the onions in a saucepan with the butter until translucent and slightly brown.  Add the apples and cook gently until they begin to soften.


Skin the tomatoes by piercing the skin then dropping into boining water to blanch for 10 seconds.  Pull the skin away from the flesh with the blade of a knife, dice into cubes.


Add the tomatoes, cider vinegar, mincemeat and sugar and simmer on a low heat for 20 minutes, stirring occasionally until all ingredients have softened and the liquid has thickened.


Season to taste.
